Mincemeat is one of those foods that you either love it or hate it. The biggest question has always been, exactly what is mincemeat? Mincemeat is defined by Answers.com as a mixture, as of finely chopped apples, raisins, spices, meat, and rum or brandy, used especially as a pie filling. Sounds like I might just like it. Whoops was I suppose to say I love it?
 
Ingredients
1 cup shortening 1 1/2 cup sugar
3 eggs 3 cups unsifted flour
1 tsp baking soda 1/2 tsp salt
1 package 9 oz None Such Condensed Mincemeat, crumbled  
 
Directions
Preheat oven to 375 degrees. In a large mixer bowl, beat shortening and sugar until fluffy. Add eggs; beat well. Stir together dry ingredients; gradually add to the shortening mixture. Mix well. Stir in the mincemeat. Drop by rounded tablespoonfuls, 2 inches apart, onto greased baking sheets. Bake 8 to 10 minutes or until lightly browned. Cool. Decorate with icing or gel if desired.
For a more cake-like cookie, substitute 1 1/3 cups of Ready to use mincemeat for the condensed mincemeat.
