My Grandma Curley would bake this cake for me when I was a little girl. My mother especially liked it.
Ingredients
1 box yellow cake mix
1/4 tsp baking powder
1 cup oil
4 eggs
1 can 11 oz mandarin orange
Frosting
1 can (20 oz) crushed pineapple juice and all
1 box (3 1/3 oz) instant vanilla pudding mix
1 carton (9 oz) non-dairy whipped topping
Directions
Mix the cake mix, baking powder, oil and eggs in a large glass bowl. Add the can of mandarin orange, juice and all. Mix by hand at this point to avoid the smashing of the orange sections.
Pour into three 8 inch greased and floured pans. Bake 15 to 20 minutes at 350 degrees. Frost between layers and on top.
Frosting: Mix the pineapple, juice and all, the vanilla pudding mix and the whipped topping. Ice the cake.
