When MawMaw read the title of the recipe she thought of the 1961's hit of Trini Lopez - "Lemon Tree very pretty and the lemon flower is sweet but the fruit of the poor lemon is impossible to eat" -except in this very easy and versitile dessert.
 
Ingredients
1 cup chopped pecans 1 cup flour
1 stick oleo 1 1/2 tbsp sugar
1 package 8 oz cream cheese 1 1/2 cup powdered sugar
1 Cool Whip - 9 oz 1 can lemon pie filling
 
Directions
Cream pecans,flour, margarine, and sugar together. Press into a 9 x 13 pan and bake 15 to 20 minutes at 350 degrees; cool.

Mix cream cheese, powdered sugar, 3 tablespoons of cool whip, and spread over cooled crust. Put lemon filling on top of cream cheese filling and top with remaining cool whip and refrigerate.

May also use cherry, blueberry pie filling or filling of choice. May also use 2 small packs Jello instant pudding of choice, instead of pie filling.
