Biscuits are a favorite of the Cajuns. This biscuit recipe has been modified to utilize modern day Cajun favorites. Try them for breakfast or for supper when a light meal is wanted.
Ingredients
2 cups flour
1/3 cup sugar
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
8 ounces lemon yogurt
1 egg slightly beaten
1/4 cup melted butter
1 tsp grated lemon peel
1 cup blueberries
Glaze
1/2 cup powdered sugar
1 tbsp lemon juice
1/2 tsp grated lemon peel
Directions
Combine all the dry ingredients. Combine yogurt, egg, butter, and lemon peel. Add to the dry ingredients. Fold in the blueberries gently.
Drop onto a cookie sheet and bake 400 degrees for 15 to 18 minutes.
GLAZE: While the biscuits are baking prepare the glaze by combining the powdered sugar, lemon juice and lemon peel.
