This dish is a great budget stretcher. Cajuns love to blend various combinations of foods. Great one-dish such as this one are family favorites and are served at potluck suppers, social and family gatherings where friends can catch up on local gossip. Gossip according to Wikipedia consists of casual or idle talk of any sort, sometimes (but not always) slanderous and/or devoted to discussing others.
Ingredients
1 cup packed rice
3 tbsp flour
1 tsp chili powder
1 /12 tsp salt
1/4 tsp pepper
2 tbsp oleo or butter
1 pound ground beef
2 tbsp finely chopped onion
2 tbsp finely chopped bell pepper
1 can diced tomatoes No 2 size (your choice)
1 can whole kernel corn
1/2 cup butter or margarine
Directions
Grease (Oil) a 2 quart casserole - measure rice from package and spread in an even layer on the bottom of the dish. Mix the flour, chili powder, salt and pepper. Sprinkle 1/3 of the mixture over rice and dot the rice with butter. Next mix the ground beef with the onion and pepper and spread over the rice. Repeat using another 1/3 of the flour mixture and butter. Make a layer of the tomatoes including the liquid; repeat with the final 1/3 mixture of the flour and butter. Spread the corn on top and dot with butter. Sprinkle bread crumbs over top. Cover and bake in 350 degree oven for 45 to 50 minutes.
