Boiled potatoes quarters deep fat fried; wonderful to serve with fried fish, shrimp, or boiled crabs. |

| Ingredients |
| 10 large white potatoes. peeled and quartered. |
salt water to taste |
| oil for deep fat frying |
crawfish or crab boil seasoning to taste (optional) |
| Cajun seasonings to taste |

| | | Directions | | Peel potatoes and cut into large chunks. Place chunks into seasoned water. Boil until tender when a fork is inserted into potato chunks. Remove and allow to cool. Preheat oil to 350 degrees. Add potato chunks and fry until golden brown. Remove, season (black pepper, red pepper, garlic powder, any Cajun Seasoning of choice) and enjoy. Serve with fried fish, shrimp, or boiled crabs. |
