This cake is done so fast and is great when you are in a hurry for a dessert. It is called the funeral cake because it could be whipped up in a hurry to take to someones home in time of need. |

| Ingredients |
| 2 eggs |
3 cups sugar |
| 2 cups flour |
2 tsp baking soda |
| 1 can crushed pineapple, not drained |
1 small can evaporated milk |
| 1 cup pecans, chopped |
1 stick oleo |

| | | Directions | Mix baking soda in with flour. Then add eggs, 2 cups of sugar, and pineapple.
Mix well by hand.
Pour into a well greased 13x9 Pyrex dish.
Bake for 30 minutes at 375 degrees or until knife inserted comes out clean.
While the cake is baking, mix all remaining ingredients together
for the icing. Bring to boil and let cook for 10 minutes.
Spread the icing onto the cake after it is removed from the oven. |
