As a young mother, I was given this recipe. It is truly wonderful. |
| |
| Ingredients |
| 1 1/2 cup sugar |
2 cups flour |
| 2 eggs |
1 large can fruit cocktail with liquid |
| 1 tsp vanilla |
2 tsp baking soda |
| 1/2 tsp salt |
1/2 cup brown sugar |
| 1/2 cup pecans |
Icing |
| 1 stick oleo, margarine or butter |
3/4 cup sugar |
| 1/2 can canned evaporated milk |
1/2 cup pecans |
|
| | | Directions | Cake: In a large mixing bowl, mix the sugar, flour, eggs, vanilla, soda, salt, and the fruit cocktail. Pour into a greased and floured sheet pan. Top with brown sugar and pecans. Bake at 350 degrees for 1 hour.
Icing: In a sauce pan combine the margarine, sugar and canned milk and cook for 2 minutes. Add the 1/2 cup pecans. Let it turn stiff and spread over cooled cake.
