This is a recipe my mom used to make to take to work. It was really good, and she'd always have to make sure my sister and I didn't eat it before she got it out of the door.
 
Ingredients
4 cups peeled apple slices 2 cups sugar
2 cups flour 1 1/2 tsp baking soda
2 tsp salt 2 eggs
3/4 cup oil 2 tsp vanilla
1 cup chopped pecans, optional 1 13x9 baking dish
 
Directions
Preheat your oven to 350 degrees. Mix apples and sugar together.
Add all remaining dry ingredients and stir.

Separately, in a bowl, mix eggs, oil and vanilla extract.
Mix the dry and wet mixtures together.

Stir in pecans and pour into a 13x9 inch pan.
Bake for 50 minutes or until done.

Scale this recipe to servings.
