This is a recipe my mom used to make to take to work. It was really good, and she'd always have to make sure my sister and I didn't eat it before she got it out of the door. |

| Ingredients |
| 4 cups peeled apple slices |
2 cups sugar |
| 2 cups flour |
1 1/2 tsp baking soda |
| 2 tsp salt |
2 eggs |
| 3/4 cup oil |
2 tsp vanilla |
| 1 cup chopped pecans, optional |
1 13x9 baking dish |

| | | Directions | Preheat your oven to 350 degrees. Mix apples and sugar together.
Add all remaining dry ingredients and stir.
Separately, in a bowl, mix eggs, oil and vanilla extract.
Mix the dry and wet mixtures together.
Stir in pecans and pour into a 13x9 inch pan.
Bake for 50 minutes or until done. |
