These I think are the best pancakes that I have ever eaten. They remind you of the French Crepes. |

| Ingredients |
| 1 cup sifted flour |
1 tbsp sugar |
| 3/4 tsp salt |
1/2 tsp baking powder (1/4 if double setting) |
| 2 eggs, beaten |
1 1/4 cup milk |
| 2 tbsp butter, melted |
2 tsp lemon rind grated |
| powdered sugar or syrup |

| | | Directions | Mix all ingredients in a medium mixing bowl.
In a small skillet with the top burner on, spray Pam. Pour a small amount of the batter in the skillet and tip the skillet so as the batter will coat the bottom layer of the skillet and a thin layer will form. Then flip the pancake over.
Almost immediately, remove the pancake onto a plate (also remove the skillet from heat), butter the inside and roll the pancake up like a thin French pancake; ready to eat with powdered sugar or your favorite syrup.
Adjust the temperature on your stove top as you are now ready to make more.
As a serving suggestion, you could also spread a very thin layer of your favorite jam or jelly before rolling up. |
