We was po' & ate anything that didn't eat us. When I had kids, Mom & Grandma would make fritters of all kinds for my children. It was a treat; They couldn't wait to go (and visit) so they could get "monsters"; that's what my kids called them. Mom & Grandma would just drop the
batter in hot oil & it would run.
Ingredients
1 eggplant soaked in sugar water
3/4 cup flour
1/4 cup milk
3/4 tsp salt
dash pepper
1/2 tsp baking powder
cinnamon sugar for dusting
Directions
Peel and dice eggplant and soak in sugar water; drain well.
Place in skillet WITHOUT water or butter, cover and simmer
slowly until tender.
Mash, then add it to the rest of the ingredients already mixed together.
Cook as fritters in hot oil until golden on each side.
