Prep Time:20 minutes
Cook Time:50 minutes
Ready In:1 hour, 10 minutes
Adapted from the Hasbro Children's Hospital Cookbook, which raised funds for the pediatric center's original opening.
 
Ingredients
1 box yellow cake mix 1/2 cup chopped almonds or walnuts
1/8 tsp nutmeg 2 eggs
1 1/2 cup eggnog 1/4 cup butter melted
powdered sugar (opt.) Rum Sauce Optional
1 cup granulated sugar 1/2 cup water
1 tsp butter or margarine 1/2 tsp vanilla
1 1/2 ounce rum (3 tblsp)  
 
Directions
Preheat oven to 350 F. Gently butter a bundt pan. Press nuts on bottom and sides of pan. Combine remaining ingredients. Beat until smooth: 4-5 minutes. Pour into pan and bake at 350 F. for 45-50 minutes until cake tests done. Cool 10 minutes. Remove from pan and sprinkle with powdered sugar if desired. Or prepare rum sauce: prick the cake with a fork and pour the rum sauce on top or slice and serve individually. Rum Sauce - Boil the sugar and water 5 minutes. Add butter, vanilla and rum. Cook mixture until syrupy. Yields about one cup.
