Makes: 8 servings
Prep Time:20 minutes
Cook Time:30 minutes
Ready In:50 minutes
Pecans and honey together makes this a major source of enjoyment. Great for the holiday season or anytime a great cake is in order.
 
Ingredients
2 sticks butter 1 cup honey
4 eggs 1 1/2 tsp lemon juice
3 cups flour 2 1/4 tbsp baking powder
1/2 tsp salt 3/4 cup pecans chopped
1 cup fruit chopped  
 
Directions
Preheat oven to 350 degrees.

In a medium saucepan, melt butter with honey. Remove from heat.

Mix well and add slowly the eggs and lemon juice.

Mix the flour, baking powder and salt and add to the mixture.

Add the chopped fruit and pecans to the batter. The batter will be stiff.

Pour into a greased flour baking pan. Bake at 350* for 30 minutes or until toothpick inserted comes out clean.
