Green beans also known as string beans or pole beans are a popular vegetables amoung the Cajun culture. Try this dish for some variety. |

| Ingredients |
| 6 slices bacon, crisply fried |
3/4 cup onion |
| 1/2 cup chopped green pepper |
2 tbsp flour |
| 2 tbsp brown sugar |
1 tbsp Worcestershire sauce |
| 1/2 tsp salt |
1/4 tsp pepper |
| 1/8 tsp dry mustard |
1 can 16 oz peeled tomatoes |
| 1 can 16 oz green beans |

| Directions |
In the same skillet that you browned the bacon keep 3 tablespoons of drippings and add the onion and green pepper. Saute until tender.
Blend in the flour, sugar, Worcestershire sauce, salt, pepper and mustard. Add the tomatoes. Cook over medium heat stirring constantly until thick.
Add the green beans and heat thoroughly.
Serve and garnish with bacon. |
