This is an old time favorite we had as kids. My aunt made these at holiday times.
Ingredients
1/2 cup sugar
2 cups sugar
2/3 cup milk
2 cups pecans coarsely chopped
1 tsp vanilla
2 tsp butter or margarine
Directions
In a small heavy skillet on medium heat, carmelize 1/2 cup sugar until melted. It is expected that this mixture will be become hard to stir.
In the meantime, cook the 2 cups sugar and milk in a 2-3 quart heavy saucepan stirring frequently. Add the carmelized sugar slowly to the mixture and then the pecans.
Cook on medium heat until the mixture forms a soft ball when dropped in cold water (236 degrees softball stage).
Add the vanilla and butter but DO NOT STIR.
When the mixture cools, beat until the mixture starts to hold it shape. Drop into mounds on waxed paper. Makes about 40 small pralines.
Store in an air tight container.
