A true Cajun classic. The flavor really is exceptional. This version is meant to be served over rice, pasta or puff pastry. |

| Ingredients |
| 1/2 cup butter |
1/2 cup flour |
| 2 cups heavy cream |
1 1/2 pound clean crawfish meat |
| 1/2 tsp salt |
1/2 tsp white pepper |
| 1 1/2 tsp cayenne pepper |
2 cups sharp cheddar cheese |

| | | Directions | | Preheat oven to 350 degrees. In a skillet, melt butter and blend in flour to make a roux. Gradually add cream, stirring constantly, until mixture thickens. Add crawfish, salt, pepper, and cayenne. Heat thoroughly. Spoon mixture into a 2 quart casserole dish. Top with cheese and bake 20 minutes. Serve over rice or puff pastry... |
