Not only are crawfish great as a meal all by themselves, but they are wonderful in making a variety of sauces. The ingredients used are from LACRAWCO (Louisiana Crawfish Company)suggestions and is their favorite topping for steaks and grilled fish. However, no quantities were given, therefore the amounts on this recipe are guesstimated but undoubtedly good. Ingredients
1 package crawfish tails 1 small package fresh mushrooms sliced
1/2 bunch green onions chopped 1/2 cup white wine
4 tbsp butter Tony Chachere to taste or other Cajun Seasonings or Season All
dash of worchestershire sauce, lemon juice, red hot sauce or Tobasco and salt.  
 
Directions
Saute' crawfish tails in mushrooms, green onions, white wine and butter, adding Tony Chachere's seasoning to your taste. Add a dash of worchestershire sauce, lemon juice, red hot sauce, and salt.

Cook or reduce down until the mushrooms wilt. Serve over your choice of meat or fish.

Editors Note: You may have to add extra butter and/or wine to get a nice serving sauce consistency.
