What are cracklings - Ask any Cajun and they think Gratton! If you inquire with Ask.Com they write -
cracklings - The crisp bits that remain after rendering fat from meat or frying or roasting the skin, especially of a pig or a goose. One thing that everyone agrees on - Cracklings are GOOD! This recipe is a modification of a recipe posted by Kelly~WA on Recipe Link.
Ingredients
2 cups yellow cornmeal
1/2 cup all purpose flour
1 tbsp baking powder
2 tsp salt
1 egg beaten
2 cups milk
1 cup cracklings (chopped)
Directions
Combine ingredients. Heat two greased muffin pans in a 400 degree oven for 3 minutes or until very hot.
Pour batter into hot muffin pans, filling 2/3 full.
Bake at 350 degrees for 30 minutes or until golden
brown.
Maw Maw adds ---Pour some Steens cane syrup or maple syrup for an added treat. So Good!
