A classic Crabmeat AuGratin dish. French bread and salad. This is a WOW meal.
Ingredients
1 stalk celery chopped
1/4 stick butter
1 cup onions chopped (white and green)
1/4 cup flour
1 evaporated milk 13 oz can
2 egg yolks
1 tsp salt
1/2 tsp red pepper
1/4 tsp black pepper
1 pound crabmeat
1/2 pound grated cheddar
Directions
Preheat oven to 375 degrees. Saute celery and onion in butter. Slowly blend in the flour; pour in the milk and stir constantly. Add the egg yolks and peppers. Cook 5 minutes. Mix crab into the sauce mixture. Add in a little melted cheese to the dish for an even richer flavor.
Transfer to a 2 quart baking dish or individual boat dishes and sprinkle with cheese. Bake 10 to 15 minutes.
