Makes:
Prep Time:25 minutes
Cook Time:45 minutes
Ready In:1 hour, 10 minutes
This is a great party dish for entertaining. Try it at your next political function, wedding or baby shower.
 
Ingredients
2 cans cream corn 1 can whole kernel corn drained
2 eggs 1 cup milk
1 onion chopped 1/2 medium green pepper chopped
1/2 medium red pepper chopped 1/2 can Rotel Brand Tomatoes or spice it up and use the entire can
1/2 tsp salt (or more to suit taste) 1/2 tsp black pepper
1 pound crawfish tails (optional)  
 
Directions
Preheat oven to 400. In a microwave safe bowl, combine the Rotel tomatoes, onions and bell peppers. Microwave for 5 minutes.
Combine the mixture with the rest of the ingredients. Mix thoroughly.
Garlic and onion powder may be added as optional seasonings. Spray PAM on the bottom of a 13 x 9 casserole dish. Cook for 45 minutes in a 400 degree oven until the casserole dish forms together like a cake or quiche'. Add a pound of crawfish tails to the mixture before baking for a different twist to the dish.
