A wonderful, quick and easy corn dish.
Ingredients
1/2 cup chopped onion
1/2 cup chopped bell pepper
1/2 cup chopped celery
1 stick margarine
1 1/3 cup minute rice
1 small jar pimento
2 cups shredded veletta cheese
2 cans cream style corn
Directions
Saute' onions, peppers, and celery in butter/margarine. Then mix all remaining ingredients except cheese. Add red pepper to taste but no salt.
Pour into a 2 or 3 quart casserole dish, sprinkle the grated cheese on top, cover and bake at 350 degrees until the cheese is melted approximately 20 minutes.
