Remember the line from this song by Harry Nilsson - "You put de lime in de coconut, you drank 'em bot' up"? This is not what you do with coconut in this recipe but the result is the "You put the cookie in your mouth and you eat 'em right up".
 
Ingredients
1/2 cup dark brown sugar, firmly packed 1/4 cup shortening
1 egg yolk 1/2 tsp vanilla
1 cup sifted all purpose flour 1/2 tsp salt
1 tsp baking powder 1 whole egg
1 egg white 1 tsp vanilla
1 cup dark brown sugar, firmly packed 2 tbsp flour
1 cup flaked coconut 1/2 cup chopped walnuts
 
Directions
Beat together 1/2-cup brown sugar, shortening, egg yolk and vanilla. Stir in flour sifted with salt and baking powder. Pat firmly over bottom of a greased-and-floured 9-inch square pan. In same bowl, beat egg and egg white with fork; add rest of ingredients and mix well. Spread evenly over unbaked layer in pan. Bake at 350 degrees for 25 to 30 minutes. Cool in pan. Cut into squares or small bars.
