This bright, spicy condiment is great alongside fowl or simply spread atop cream cheese on a cracker. Serve at your next party or family gathering. |

| Ingredients |
| 4 large red peppers cut into 1/2 inch dice |
2 jalapeno seeded and finely chopped |
| 4 cloves garlic finely minced |
1 1/4 cup cider vinegar |
| 1 cup light brown sugar |
1 cup granulated sugar |
| 1 cup golden raisins |
1/2 cup finely crystallized ginger |

| Directions |
Place and combine all ingredients in a 4 quart microwave safe casserole dish.
Cook, uncovered on the High setting until thickened; about 45 minutes.
Cool slightly, seal and spoon into decorative jars. Cool completely and keep refrigerated.
Note: You could cook this on your stovetop. Cook until thickened over medium heat.
Place a pretty ribbon around the jar and give as a Christmas goodie along with a box of dipping or saltine crackers. |
