Prep Time:20 minutes
Cook Time:45 minutes
Ready In:1 hour, 5 minutes
This bright, spicy condiment is great alongside fowl or simply spread atop cream cheese on a cracker. Serve at your next party or family gathering.
 
Ingredients
4 large red peppers cut into 1/2 inch dice 2 jalapeno seeded and finely chopped
4 cloves garlic finely minced 1 1/4 cup cider vinegar
1 cup light brown sugar 1 cup granulated sugar
1 cup golden raisins 1/2 cup finely crystallized ginger
 
Directions
Place and combine all ingredients in a 4 quart microwave safe casserole dish.

Cook, uncovered on the High setting until thickened; about 45 minutes.

Cool slightly, seal and spoon into decorative jars. Cool completely and keep refrigerated.

Note: You could cook this on your stovetop. Cook until thickened over medium heat.

Place a pretty ribbon around the jar and give as a Christmas goodie along with a box of dipping or saltine crackers.
