Here is a fun fact from www.ilovepecans.org - you imagine a pecan skyscraper? It would take 11,624 pecans, stacked end to end, to reach the top of the Empire State Building in New York City. Kinda glad it only takes 2 cups for this pecan treat. Makes a sweet Christmas gift.
Ingredients
1/2 cup semi-sweet chocolate chips
3 tbsp heavy cream
1/4 tsp vanilla
2 cups pecan halves
Directions
Roast pecans for two minutes in a microwave; stirring once during the process. Set aside. Combine the chocolate chips and cream in a double boiler. Stir until melted and smooth. Add vanilla and remove from heat. Stir pecan halves into the chocolate until completely coated.
Remove a few pecans at a time with a slotted spoon. Separate pecan halves and place onto a waxed paper lined cookie sheet or parchment paper. Refrigerate for 10 minutes to set. Change the pace and add a dash of cinnamon.
