When my children were younger we went to this restaurant that served cheese and ground meat over tortilla chips. The owner's name was Elaine and to her memory I dedicate this recipe. We never made it quite as good but we have not eaten quite as good either. |

| Ingredients |
| 1 pound lean ground meat |
1 package American or Mild Mexican Style Cheddar Cheese |
| 2 1/2 tsp chili powder plus 1/2 tsp |
2 small onions chopped |
| jalapeno pepper sliced optional |
Season All salt, garlic powder, onion powder to taste |
| Tortilla Chips |
Salsa (optional as a side) |

| | | Directions | Season ground meat with Season-All, garlic powder, onion powder and 2 1/2 tsp chili powder. Brown in skillet and drain excess grease. In a separate pan, Teflon coated preferably, saute the onions until wilted adding to taste some black pepper, cayenne, garlic powder, 1/2 tsp chili powder and season all. Combine together well the meat and onion mixture.
On a pizza platter or cookie sheet, arrange a single layer of chips, you can add the optional peppers here, and spread the mixture over the chips. Take the cheese slices (I find the Mexican Style Cheese to be the best for this recipe but use what you have) and place over the meat and chip. Place in a preheated 350 degree oven until the cheese melts about 5 to 8 minutes and serve at once. Salsa can be added as a side.
