Twenty years ago, being a Mom to Little League baseball players, we were sometimes asked to bring chili for the chili dogs sold as a fund raiser. One of the patrons, Mr Meaux liked my chili so much he asked his wife change her recipe. That was one of my greatest cooking compliments.
 
Ingredients
5 tbsp chili powder (Mex-ene) 4 tbsp shortening
2 pounds chili ground meat 2 onions chopped
1 bell pepper chopped 4 garlic cloves minced fine
1 bay leaf 1 tbsp cumin or additional chili powder
1 can tomato sauce water
2 cans chili beans (for variety) 1 can black bean soup (for variety)
 
Directions
In heavy saucepan or cast iron pot, brown meat, bell pepper, garlic and onion in oil. Salt and pepper to taste. Add the chili powder and cumin. Stir together.

Combine with the tomato sauce; heat thoroughly. Add water until the desired consistency is reached. Simmer for 30 minutes stirring to prevent scorching. Serve over your favorite wiener and hot dog bun.

To extend this dish for home use, add 2 cans of chili beans. In addition to the above ingredients, my recipe 30 years later is to add a can of black bean soup to the other beans and chili.
