Flavorful(just as the Cajuns can make it), creamy tomatery sauce w/chicken over noodles or rice! Really simple to prepare just requires attention.
 
Ingredients
2 pounds boneless chicken breast 1 1/2 cup flour
1/2 cup olive oil 1 onion chopped fine
1 bell pepper chopped 2-3 cloves of garlic minced fine
2 cans chicken broth 1 can 16 oz stewed tomatoes with onion and sweet pepper
1 can 8 oz tomato sauce 1 can 6 ox can tomato paste
1 can 8 oz mushrooms 1/2 tsp dried basil
2 bay leaves salt, black pepper, red pepper, garlic powder
fettuccini noodles parmesan cheese
 
Directions
Season chicken breasts and (cut into strips).Dredge in the 1½ cup flour (seasoned to taste). Brown in olive oil, and remove to a paper toweled plate. Add remaining flour to oil and lightly brown similar to a roux. Add onions, bell pepper, and garlic and simmer until wilted. Add stewed tomatoes, tomato paste, tomato sauce, and mushrooms. Replace chicken add chicken broth, basil, and bay leaves.
Season to taste with salt, black pepper, red pepper, and garlic powder. Cover and simmer about one half hour; stir occasionally.

Serve over fettuccine noodles with Parmesan cheese sprinkled on top with green salad and toasted garlic French bread. Ces't ce bon!
