Yam Casserole with Crunch Topping

Makes: 8 servings
Prep Time:30 minutes
Cook Time:35 minutes
Ready In:1 hour, 5 minutes
A classic favorite.
 
Ingredients
3 cups cooked mashed yams 2 eggs beaten
1/2 stick melted oleo (butter or margarine) 1 1/2 tsp vanilla
1/3 cup all purpose flour 1/3 stick oleo
1/2 cup white sugar 1/2 tsp salt
1/2 cup milk 1/2 cup brown sugar
1 cup chopped nuts  
 
Directions
Combine yams, white sugar, eggs, salt and 1/2 stick of oleo. Add milk and vanilla. Mix well.

Spoon into a buttered 1 1/2 quart casserole dish.

In a separate bowl, combine the brown sugar, flour, nuts and 1/3 stick oleo. Spread the mealy mixture on top of the yams.

Bake at 350 degrees for 35 minutes or until set.

Scale this recipe to servings.
