Yummy, yummy. Nice way to use up figs during fig season in SW Louisiana |
| |
| Ingredients |
| 2 cups brown sugar |
1/2 cup oil |
| 3 eggs |
2 cups all purpose flour |
| 1 1/2 tsp baking powder |
2 tbsp water |
| 1 tsp vanilla |
1/2 tsp cinnamon |
| 3 cups fig preserves |
1 tsp margarine |
| 1 cup chopped pecans |
| |
| | | Directions | In a large glass bowl, combine brown sugar, margarine, oil and eggs. Add the figs, and vanilla.
In a separate bowl combine the flour, cinnamon and baking powder.
Combine the dry and wet ingredients (including water)stirring until well mixed. Add the pecans.
After mixing all together, pour into a bundt cake pan or sheet cake pan;
Bake @ 350 for an hour or so...When toothpick inserted in middle comes out clean, it's done.
Then relax and pour yourself a great cup of coffee and have a piece of fig cake. You deserve it!
