Big Nick's Cajun Caesar Salad

Ahhh Cajuns.....Always making a good thing better with Cajun written all over it! This is a slightly different version of the traditonal caesar salad - Ceasar's a'la Cajun. This dish is so hearty it is best had as a main meal.
 
Ingredients
300 grams Cos Lettuce leaves 2 cups croutons
1/2 cup diced bacon 1/2 cup Fresh grated parmesan (no substitute)
200 grams breast fillet chicken Caesar dressing (supermarket or homemade recipe below)
Cajun spice lemon juice
olive oil Caesar Dressing Ingredients
1/2 cup olive oil 1 clove of garlic
1/4 cup balsamic vinegar 2 tbsp Dijon mustard
1/2 tbsp Worcestershire sauce 2 tbsp lemon juice
 
Directions
Slice chicken into small strips and paste with oil and lemon juice, sprinkle with Cajun spice, and cook on grill for about 15 minutes on high. If you do not have an outside grill, you can use a George Foreman or place under the broiler of the oven until done.

To make Caesar dressing, combine in a screw top jar; 1/2 cup of olive oil, 1 clove of garlic, 1/4 cup of balsamic vinegar, 2 tablespoons of Dijon mustard, 1/2 tablespoon of Worcestershire sauce, and 2 table spoons of lemon juice. Shake well, and refrigerate until needed.

In a large salad bowl, mix the lettuce, croutons, bacon and parmesan cheese, then dish out each serving on to the serving plates. Place the chicken on top, then pour on the salad dressing and serve straight away so the lettuce stays crisp.
