Broccoli is a hardy vegetable of the cabbage family that is high in vitamins A and D. It develops best during cool seasons of the year. When broccoli plants of most varieties are properly grown and harvested, they can yield over an extended period. Two crops per year (spring and fall) may be grown in most parts of the country. Although broccoli is not a Cajun grown vegetable, it is found in many Cajun recipes. Great for Holiday Cooking.
 
Ingredients
1 cans cream of chciken soup 1 cup chopped onions
1 cup chopped celery 1 small box frozen chopped broccoli (cook and drain)
3 tbsp margarine 1 small jar jalapeno cheese whiz
2 cups cooked rice 1 soup can of milk
 
Directions
Preheat oven to 350.

In a medium pan, saute' onions and celery in margarine.

Mix in the cream of chicken soup and milk.

Stir in cheese whiz then add the broccoli and cooked rice.

Season to taste with black pepper. (Remember the soup is already salty.

Place in 2-3 quart casserole dish. Cover and bake at 350 degrees for 30 minutes.

Scale this recipe to servings.
