Bellpepper Italiana a la' Cajun

Tastes like stuffed bellpeppers, but less trouble. Can also be used a side dish.
 
Ingredients
5 -6 medium to large bell peppers cut into bite sized pieces 1 1/2 pound ground meat
1 onion chopped 1 tbsp chopped garlic
1 can Rotel Italian Style Tomatoes (may also add a small can of tomato paste with this ...if you like more tomato flavor) 1/2 cup parmesan cheese
1/2 cup Italian Bread crumbs 1 (Optional) large bag of dried shrimp soaked in cold water
salt and pepper to taste parmesan cheese and bread crumbs for topping
 
Directions
Cut bellpeppers into bite sized pieces.

Brown ground meat with the onions,and garlic. Drain excess fat.

Put back in the cooking pot, add the chopped bellpeppers and smother (cook)until peppers are cooked down.

Add drained dried shrimp (if using).

Add salt and pepper. Stir until mixed well.

Add 1/2 cup of parmesan cheese and bread crumbs. Mix well.

Grease or PAM a 13 x 9" pan. Pour mixture into pan. Top with more parmesan cheese and bread crumbs. Bake at 325 degrees for about 30 minutes, or until lightly browned on top.

This dish is delicious. It taste like stuffed bellpeppers but less trouble to make.

Although shown as a main dish......you can use it as a side dish.

Editor's Note - I have also made this dish using the Rotel tomatoes with green chilis and any type flavored bread crumbs. Both are excellent!
