July and August are prime time for peaches, figs and raspberries. A fresh fig tastes like a mix of a peach and a strawberry! Although I love fig newtons cookies which is probably the only fig most people have tasted, the taste of the fresh fig and the cookie do not compare. Treat yourself next time you see a fig tree that is ripe for picking. After asking, but most times not having to be asked, Cajuns are always willing to share their bounty and their figs!!! | Ingredients |
| Crust - Mix and Crumble |
1 1/2 cup flour |
| 1/2 tsp soda |
1/2 tsp salt |
| 3/4 cup margarine |
1 cup light brown sugar |
| 1 1/2 cup oatmeal |

Mixture |
| 1/4 cup lemon juice |
1 pint canned figs |
| 1/2 cup nuts |

| | | Directions | Combine the ingredients together for the crust and crumble the mixture. Set aside. In a separate bowl, combine the mixture of the lemon juice, figs and nuts.
In a greased 13x9x2 pan, press 1/2 of the crust crumble mixture into the pan. Spread the fig mixture over the crust mixture. Place the remaining crust mixture over the figs. Bake at 375 degrees for 30 minutes. Comment j'aime ces figues ! |
