This recipe is a popular "bread" in almost every culture witht the Cajuns not being an exception. This recipe came in the same time that we had a recipe request for it. |

| Ingredients |
| 1 cup sugar |
1/2 cup shortening |
| 2 eggs beaten |
3 bananas mashed |
| 2 cups flour |
1/4 tsp baking powder |
| 1/2 cup chopped nuts (pecans or walnuts) |
1 tsp baking soda |
| 1 tsp vanilla extract |
1/4 tsp salt |

| | | Directions | | Beat sugar, salt, vanilla, shortening, eggs and bananas in a bowl. Stir in the flour, baking powder, baking soda and chopped nuts.. Spray loaf pan with vegetable spray. Bake at 350 degrees for one hour. Cool in the pan for 10 minutes. Remove to a wire rack to complete cooling. |
