Rum Balls are a popular Yuletide Holiday Candy. Great for parties or filling holiday tins. |
| |
| Ingredients |
| 1 package vanilla wafers crushed powder fine |
2 cups pecans ground fine |
| 4 tbsp cocoa powder unsweetened |
1 package 12 oz miniature semi-sweet chocolate chips or less |
| 1 cup white Karo Syrup |
1/2 cup rum or more to taste |
| powdered sugar for rolling balls in |
| |
| | | Directions | Using a food processor, crush the wafers to fine and also do the pecans that way. In a large bowl, combine the wafers, pecans, cocoa, and chocolate chips; make sure they are the miniature kind. Stir in the corn syrup and rum; mix well into a thick dough.
Using your hands coated with sugar, I use thin plastic gloves although not needed, make small balls about the size of a walnut or quarter and place on wax or parchment paper to dry. One hour later roll the balls through the powdered sugar. Store in an air tight container. You could make the balls and roll them in the powdered sugar all in one step and set out to dry. |
