Cut and diced style beets are perfect for use in many ethnic vegetable dishes to compliment a meat or fish entree. Beets are an excellent source of fiber and phosphorous. And, a half-cup serving of canned beets contains just 35 calories. Beets were used in former days to dye Easter eggs for the Cajun Easter Egg Hunt. You know Cajuns love to hunt even at a very young age!

Ingredients
6 fresh beets Splenda
Throw away gloves

Directions
I bake my beets.
Then when they are cooled I peel them & cube them.
Sprinkle with a little splenda & enjoy..

Bake beets in 350 oven on a foiled line cookie sheet until fork tender, about 2 hours..
Cool and then peel.
Cut in chunks & sprinkle with splenda.
Don't forget to wear throw away gloves or get the clorox out to bleach the red from your hands.
