Truly a CAJUN COUNTRY recipe. This recipe was received from Mae Mae Breaux and very comparable to Aunt Melina Falcon’s recipe. Remember Aunt Melina never used measuring cups…always a handful of this and a pinch of that. Mae Mae watched her for several years and came up with this recipe…we can’t tell the difference and I bet Aunt Melina couldn’t either if she were still with us.
 
Ingredients
4 1/4 cup flour 2 cups sugar
3 tsp baking powder 1 tsp soda
1 tsp vanilla 1 tsp nutmeg
1 tsp allspice 1 tsp cinnamon
1 tsp ground cloves 1 tsp ginger
2 cups broken pecans 1 cup to 2 c. raisins [if desired]
1 cup 2 c. dates [if desired] 1/2 cup dark molasses
3/4 cup milk 1 cup oil
2 eggs 8 ounces Orange marmalade or Orange rinds (thin julienne)
1 quart canned figs, crushed  
 
Directions
Mix all dry ingredients thoroughly; mix all liquid ingredients thoroughly, then combine and bake for 60 minutes at 350 degrees in a 10x16 pan or during holidays in mini loaf pans to give as gifts. Bring out a tall glass of milk or a cup of coffee and enjoy.

(Like the Cajuns with the big hearts and smile who say "Sha Baby")
SING as though no one can hear you
(Like the Cajun belts out Jolie Blonde)

(Like the Cajun's enjoys La joie de vie)
