Angel Biscuits were the delicious classic biscuits served at your school cafeteria. The biscuits are extremely popular in and beyond Cajun country. |
| |
| Ingredients |
| 5 cups flour not sifted |
3 tsp baking powder |
| 1 1/2 tsp salt |
1 tsp soda |
| 1/4 cup sugar |
1 cup shortening |
| 1 package dry yeast |
2 cups buttermilk |
|
| | | Directions | Note: * Add 1 tablespoon vinegar to 1 cup milk and allow to stand at for 3 hours at room temperature for buttermilk. *Biscuits are better if dough is refrigerated. *Do not allow biscuits to rise.
Mix the dry ingredients, flour, baking powder, salt, soda and sugar and sift. Cut in the shortening. Dissolve the yeast in 1/4 cup warm water and mix with the buttermilk. Add liquid to the dry ingredients.
Roll out 1/4 inch, dip in melted butter and fold in two to place on pan or roll out 1/2 inch and brush the top with melted butter. Bake at 475 degrees for 10 to 12 minutes. |
