Makes:
Prep Time:	20 minutes
Cook Time:	10 minutes
Ready In:	30 minutes

The classic almond cookie served in school cafeterias. Recipe adjusted for family portions.

Ingredients

2 cups shortening

2 cups sugar

2 eggs

2 tsp almond extract

4 cups flour

1/8 tsp salt

1/2 tsp cream of tartar

2 tsp baking powder

Almonds for topping the cookie

Directions

Cream together the shortening and sugar.

Add the eggs and almond extract. Mix well.

Sift the dry ingredients together and add to the above mixture. Mix well.

Scoop onto the baking sheet into 2 to 3 inch size cookies. Flatten slightly with a nut.

Bake at 350 degrees in a convection oven 10 to 12 minutes(possibly allow more time for conventional ovens) .
