Kumquats or cumquats fruits can be eaten skin and all and they can also be made and eaten as a delicious preserve.
- 2 quarts kumquats (8 cups)
- 1 - 10 ounce jars cherries drained
- 1 - 20 ounce can crushed pineapple with juice
- 7 cups sugar
- 3 cups water
- 3 teaspoons RealFruit Instant Pectin
Wash kumquats and remove seeds.
Combine seeded kumquats and cherries and chop in blender.
In a large pot, combine all ingredients and bring to a boil.
Lower heat and simmer for 1 1/2 hours. Stir frequently using low to medium heat.
Fill very hot medium sterile jars and seal.
