Kumquats are tiny fruits with a sweet to sour citrus flavor and a fully edible peel.
Kumquats are in season starting in October in South Louisiana.
- 2 teaspoon baking powder
- 1 teaspoon soda
- 1/2 teaspoon salt
- 3 cups flour
- 2/3 cup oil
- 1 cup brown sugar
- 4 eggs
- 2/3 cups milk
- 2 cups whole seeded kumquat preserves
- 1 cup nuts
Preheat oven to 350 degrees. Grease and lightly flour the pans you are using.Mix together flour, salt, soda and baking powder
In a large bowl cream together, oil, brown sugar and eggs.
Add milk and combine.
Add the kumquats and nuts.
Add the flour mixture to the wet ingredients and combine.
Bake 350 degrees for one hour until toothpick comes out clean.
