I love eggplant; although my husband eats it, he is not that crazy about it; saw this recipe and decided to try it. He Liked It! I added cheese instead of bread crumbs for topiing.

I made this okra in preparation of my upcoming tax season. I used it to make a shrimp and chicken gumbo. I froze the gumbo in individual servings to eat for those days that I am working hard and late! That is usually until April 15th. One of my favorite comfort foods.

I've made these every day for a week! My roommates love them and were surprised when I told them they were simply fried bananas with no sugar added. I like that this dish has no hint of olive oil even though its deep fried in it.

When we were growing up, my brothers and I would look so forward to my mom's customers brining her crawfish and frog legs in exchange for her professional services. We actually got these very frog-legs from a client of hers. We fried them up in a cast iron skillet and used corn meal and shrimp batter as the coating. Talk about good!
