Ben Franklin, in a letter to his daughter, proposed the turkey as the official United States bird. In 2000, the average American ate 17.75 pounds of turkey. I can understand why. Turkey is good eating. The heaviest turkey ever raised was 86 pounds, about the size of a large dog. Most season a turkey only on the outside of the skin. The trick for better flavor is to season the turkey breast underneath the skin. This method imparts the flavor throughout the breast meat.

One of the easiest best tasting rice dressing recipes. MawMaw LeMaire made this for her 9 children and then later for her grandchildren. We have gotten many wonderful comments on this dish and shrimp can be substituted for the crawfish.

I made this for the second time this week per my girlfriend and roommates' requests. This is for the lite recipe but I like to use full fat cream of celery and mushroom and I also throw in half a stick of butter. Tonight I ran out of green bell pepper so I used a red bell pepper instead.

Oops! I forgot the onions on this one. I love low-carb tortillas and after my mom bought me 4lbs of tasso, I figured I'd combine the both of them. I made this for her this weekend and she enjoyed them as much as I did. :-D

This was positively one of my favorite dishes growing up. I accidently cooked this one down a little too long and there wasn't a lot of gravy but it was still great. I'm watching my carbs so I used low-carb ketchup and "caulirice" which is crushed steamed cauliflower. It mimics rice rather well.

Mother's Sunday Potato salad always went great with roast or gumbo.
Did you ever eat potato salad in an Evangeline Maid Bread sandwich? Let me tell you - there is not much better than eating than having two carbs together in one bite!

One of my daughter and son's favorite pie/tart is the sweet potato pies. This filling can be used for both tarts or pies. I had cooked this one when my "child" came up from California.

Remember as a kid in school you may not have eaten everything but you sure ate the bread rolls. Although the workers had a huge batch recipe, Ms Linda cut it down to a normal family recipe size. These are probably the best homemade rolls you will eat. Goes great with gumbo.

I love pumpkin pie but I can't have a lot of sugar. I made this one night so I could have the best of both worlds. It has just a few grams of naturally occuring sugar. MmmMMMmmM!

Pictured are four common herbs that Cajuns use. The scallions are known as green onions. Chives are derived from cutting the top of the scallions. The onion and garlic are most familiar. Shallots, referred to as a cross between onion and garlic have a more delicate, garlicky flavor than other cooking onions. All these herbs can be eaten raw or cooked in Cajun dishes although most find the shallots to strong in flavor for eating raw.

Cajun love their card playing especially Booray (Bouree). My good friend prepared this meal shortly before her son left for Iraq. I just know he broght his cards with him.

I made this gumbo to impress my non-Cajun friends. Sure enough they were impressed. My favorite comment was "That is the best brown soup I have ever eaten."
