  • My father (Matthias Ortiz Pasqual) grew up in the Buoys of New Orleans, caught crawfish, shrimp, crocodiles, snakes and learn how to eat them... He had a recipe for all of these... I like to capture back some of those recipes... It sounds like the kinds of recipes my Daddy used to make. We lost a lot of our recipes from my Daddy, through moving; lost storage containers and Typhoons on the Island of Guam... God Bless...

  • This is my go-to website whenever I need a recipe to wow my friends and family. I have never been disappointed, and I always receive great compliments. A lot of the recipes remind me of my Mawmaw, and the food we used to eat. Now, I'm trying to start new holiday traditions. Thanks to y'all for providing such a great website!

  • I was born and raised in Church Point, La. I cook as much as I can of the Cajun foods but my only problem is when I cook I have to leave out garlic because a lady I give food to is allergic to garlic. Yes, that is weird in my Cajun book.

  • I would just like to thank you for the recipes that are on your site. My grandmother has been the keeper of the good recipes and she suddenly had a stroke. I thought I would never introduce my kids to the great southern foods. I have a ball using the recipes and every bite brings back a good memory. I also enjoy the site of my family laying around rubbing their stomachs. lol

  • Great site! I took a course on Caajun cooking from Ms. J Miller of Iota. The first thing I learned is that Cajun does not mean smothered in cayenne or hot sauce. The blend of flavors is the KEY or secret. I am sure that I will enjoy cooking my way through your recipes....Merci!

  • Just passin' through, thought I'd look around. My mother's side ancestry is Richard/Cooper from Jennings/Elton area. I'm in Nashville, TN now by way of Denver. Interesting to see how many people are dying to be Cajun now. When I was growing up in the 50's and 60's, it wasn't cool to be Cajun and there was no bi-lingual education. I spent years in the Galliano/Golden Meadow area and I think back to those days. I can remember there were two directions, up d' bayou and down d' bayou. Ted
