Tuna Fish PieAmy Hazelwood -my daughter by her Mom Vickie Lege
One of my favorite memories growing up in my mother's kitchen was smelling this pie bake! It was an easy and quick dish to make and is better the next day after all the seasonings set in. If you have bisquit mix and tuna fish on hand you can whip up this pie easy and ready to eat in about an hour. You can use the cheese of your choice and tuna with our without oil. Its great for church potluck or to take to new mothers.

Crawfish or Crayfish are well known here in South Louisiana and their popularity have grown throughout the world. They are a Cajun favorite for dishes such as this one.
French Quarter SteakDale Begnaud in Memory of his Mom, Meredith
The French Quarter is the oldest and most famous section of the city of New Orleans, Louisiana, stretching along the Mississippi River from about Iberville Street to Esplanade Avenue and back from Decatur Stret to Rampart Street. It is also known as the Vieux Carre ("Old Quarter" in French) and the Barrio Latino ("Latin Section" in Spanish). To many it is simply called "The Quarter". A favorite "drive to" for many Cajuns.
Chicken and Sausage JambalayaDale Begnaud in Memory of his Mom, Meredith

Tender RibsDale Begnaud
Ribs contain a substantial amount of connective tissue. Therefore many cooks boil the ribs to get them tender. The length of time needed to tenderize will vary. Editor note: When I cook my ribs I think the secret to great ribs is to cook them at low temps for long periods of time. You could use this recipe and bake for 2 to 3 hours.

Eggplant CreoleDale's Kitchen In Memory of Meredith Begnaud
Fun facts from www.thefresh1.com - In 16th century Spain, the eggplant was believed to be an aphrodisiac. Europeans believed eggplants caused insanity, and called it the Mad Apple. Eggplants are best known for their purple color, but they are available in a wide variety of lavender shades-even striped!
Crawfish/Shrimp Cornbread Dressing Tesse Duhon
Great side dish to replace rice dressing with bar-b-que, brisket or grilled meat. Also a great stuffing for bellpeppers.
Cheesy Chicken SpaghettiMaw Maw's Friend
Hearty main dish. Great for potlucks or to feed a crowd! My most requested recipe. Freezes well. Fun facts on spaghetti from http://www.americanbeauty.com/cooking/FunFacts.htm Cooked al dente (al-DEN-tay) literally means "to the tooth". There are more than 600 pasta shapes produced worldwide. Thomas Jefferson is credited with introducing macaroni to the United States, he fell in love with a certain dish he sampled in Naples. Consumers enjoy pasta for dinner more than 40 times a year (approximately once a week). October is National Pasta Month. The word "pasta" comes from the Italian for paste, meaning a combination of flour and Water.
