Store potatoes in a cool, dark place with ventilation and they will keep for weeks. My parents had a shed (all dark and cool) which we used to store our crop for the winter. I can still remember the smell of the soil of the potatoes that ended up in the shed and of course the one potato that would spoil and give off an aroma that made it easy to find; so we could easily discard it. Do NOT store them in the refridgerator or they will turn brown and have develop a strange flavor. Aim for 45-50 degrees F, warmer and the potatoes will sprout and shrivel. Light causes potatoes to turn green, which imparts a bitter taste. You can store an apple with a potato to help prevent it from sprouting. How to prepare: Scrub exterior gently if they are to be cooked unpeeled. bake, boil, deep-fry, fry, puree, roast, steam, stew. Matches well with: bacon, basil, butter, caviar, cayenne, celery root, chard, cheese, chervil, chives, cream, creme fraiche, dill, fennel fenugreek, garlic, ham, horseradish, kale, leeks, lovage, mint, mushrooms, mustard, nutmeg, olive oil, olives, onions, paprika, parsley, pepper, pork, salt, savory, smoked salmon, sour cream, squash, sweet potatoes, thyme, turnips.

Seafood Dressing or Dipping SauceMawMaw Ruby's Recipe Box
This no cooking sauce is great used as a cocktail sauce or for dipping boiled seafood especially shrimp and crawfish. Editors Note - MawMaw learned many years ago that as long as you never put mayonnaise in the refrigerator to begin with, you do not need to store in the refrigerator after opening. It was a hard to change not storing in the fridge after being raised that way. But I do not store my mayo in the fridge since I was shown this as a young mother.

There is a wonderful cafe in South Crowley known as the "The Firehouse Cafe'. Actually they were voted as having the "Best Plate Lunch" in Crowley. MawMaw does agree cause she eats there quite a bit. This cornbread recipe was handed down from the owner's grandmother, Amedia Meaux, to her mother Lerline Meaux. This recipe is great for making cornbread dressing, eating with cracklin's, syrup or MawMaw's favorite, cornbread, milk and fig preserves. But Mawmaw is from the old school too; she loves to drop coffee in her milk for that real great coffee milk flavor! Oh and don't forget to put a teaspoon of sugar on top of that cornbread!

To get this recipe I had to beg and rely on a memory! Kaplan's finest and some older softball players, the Jr Bucs and Lady Bucs, recently reunited. This pasta dish was one of the the "hits" of this baseball reunion. The cleats and gloves that had been hung up years ago came off the shelf that night, if only in spirit. The fun and comaradie shared on the playing field magically returned. Reunions are so much fun!
