The Classics
Andouille SausageDale Carter
This homemade Andouille sausage is the real thing, and it IS spicy! It's great for seasoning beans and gumbo; or use it in anything else that calls for smoked sausage. I use pecan or hickory wood for the smoke, but any fruit wood would do.
Crawfish/Shrimp Cornbread Dressing Tesse Duhon
Great side dish to replace rice dressing with bar-b-que, brisket or grilled meat. Also a great stuffing for bellpeppers.
Gold Brick CandyDale's Kitchen In Memory of Meredith Begnaud
www2.tulane.edu/article_news_details.cfm?ArticleID=5530.............Excerpts - "Generations of New Orleanians "and Cajuns" have grown up with Elmer's Gold Brick, Heavenly Hash and Pecan Eggs as an essential part of their Easter holiday. Gold Brick was the first candy bar to sell for a dime, and it still sold." Per the editor - Gold Brick Candy is very popular around Easter time; sometimes though all Gold Bricks candy sell out as I have often found out. If you can not locate any and you have an inkling for one, this recipe will satisfy your cravings and sweet tooth.

A favorite Cajun classic!
Blue Ribbon Dessert - Four Layer Delight - Mississippi Mud Pie or maybe Bayou Goo Crescent Lopez
This recipe has an interesting story behind it. MawMaw first ate this dessert at a get together to celebrate the visit of the author's brother-in-law on leave from Iraq. It was the hit of the evening. The author tells us her best friend won a blue ribbon for this dessert. MawMaw gets the recipe and makes the dessert and goes to Holly Beach for a weekend of fun. One of her friends declares it the best dish prepared for the weekend. Here we go, it wins again. The friend then gets his Mom's recipes to submit to the website and finds his Mom had that same recipe also under a different name. Then Maw Maw's mother-in-law gives her all her mother's recipes in an old recipe box. Her Mom lived until the age of 99. You guessed it - this same recipe was in my treasured recipe box! We also found that it mimics Bayou Goo - Bayou Goo is a pecan crust with a layer of sweet cream cheese, then a layer of vanilla custard swirled with chocolate chunks and topped with whipped cream and chocolate shavings.

Crawfish Fettucini - FettucciniDale Begnaud in Memory of his Mom, Meredith
fettuccini d'écrevisse - One of our more popular classics. Shrimp could be used instead of the crawfish or combined with crawfish along with crab meat.
Fig Cake IV la gâteau de figueDale Begnaud in Memory of his Mom, Meredith
Most people have had dried figs (especially in fig newtons!), but fresh figs are a real treat especially when used in a fig cake - la gâteau de figue!

Persimmon or Diet Persimmon CookiesDale Begnaud in Memory of his Mom, Meredith
Le kaki ou suit un régime le kaki - our recipe title in French. These were some of our favorites growing up - both the fruit and the cookie. The fruit was especially sweet if allowed to almost overripe. But they sure were tart and bitter if you did not wait until the fruit was fully ripened. I can still see them on the my Mom's windowsill ripening. The color of the fruit varies from light yellow-orange to dark orange-red. The size can be as little as a few ounces to more than a pound. Ours were about the size of an orange. The entire fruit is edible except for the seed and calyx.

Sesame Benne' Candy - Fudge or PralinesMaw Maw
When I was a little girl I remember an aunt would make candy with sesame seeds or some kind of seed and sryup or something like it....this is the recipe! The Cajun word for sesame is benne; the smell while they are roasting brings back wonderful childhood memories.
