A slow cooked roast in a crock pot, adding roux for a robust gravy; this recipe is not quick but the results make a great Po-Boy sandwich.
I came up with this combination as a weekday afterwork, something good in a hurry - What's in the kitchen moment. It's a healthy and surprisingly tasty dish.
My friends mom used to make these for us we were in high school...which was oh...about 10 years ago. HaHa. They were our favorite! Since we are all grown and moved out, we don't see each other very often. So, out of the blue, I called her and she gladly gave me her recipe. I didn't think they would be as good as her, but you know what...they were!!!! So easy and soooooo good! Not yet rated

The original recipe Panna cotta, is an Italian dessert made by simmering together cream, milk and sugar, mixing this with gelatin, and letting it cool until set. An Italian phrase which literally means "cooked cream", appeared in Woman's Day and is not labor intense. It is so similar to our custard that Maw Maw added the recipe as part of the Nouveau Cajun. This was a big hit at a recent dinner party. Not yet rated
Imagine a clear, crisp morning with a gentle breeze moving the grass and trees. The sun is just breaking over the horizon and in the distance a flight of ducks start flying from a neighboring rice field. The thrill of the Cajun duck hunting is on it's way. Once you have bagged your limit and you think of the different dishes to make, add this one to your list. Not yet rated
This meal marries my two favorite cuisines: Cajun and Italian. Growing up in Eunice, LA, crawfish were plentiful and always anticipated during the "fishin' season."
Almost like a catfish coubillion of which if using this recipe takes a lot less time to prepare. Most Cajun women have to work similar to the rest of American society. Always nice to get a shortcut recipe to Cajun cooking.
Jon writes, "The reason I consider this Cajun is because my Mom, who is Cajun, made the recipe up". It sure is good, he claims. Not yet rated

While living in Lake Charles, Louisiana I had a few friends visiting from Austin, Texas. I offered to cook dinner for these guys, but to my surprise, they soon let me know that they were vegetarian. This was a first for me, but not a problem. My creativity led me to this Roasted Pepper Soup, which is great served as an appetizer, or as the main dish.
