| Did you party hard when January 01, 2008 rolled in? Were you sleeping? Or sharing some of this wonderful easy to make dip; Hence the words "easy" and "bachelor", synonymous words indeed. The author was once a DJ and manager of the KROF radio station in Abbeville, LA but many Kaplanlites remember him from the days when his Dad had the store next door to the school, He was able to open a pack of cigarettes back then and sell cigarettes 2 for a quarter. Remember this without telling your age? A word on this dip: The longer left in the fridge the better. One day is good; the next day is better; and one week later it is "Oh my God, how good"! The secret is to have it last that long. |
| Ms Bert as she is known by her friends was lucky enough to be coached by some of the best cooks in the Kaplan area. Her Dad, Wilton, has his own restaurant, her Aunt Carrie had a catering business and her grandma Mire had a lot of hungry mouths to feed. As the old saying goes, "the acorn does not fall very far from the tree", Ms Bert (she lets Maw Maw call her that) has learned well from the Masters creating this version using the Cajun favorites of eggplants and crab-meat. | This dip tastes JUST like buffalo wings! You get the kick; but you can make it as hot or mild as you want. My friends can't stop eating it when I bring it to parties. |

| This dish is a great budget stretcher. Cajuns love to blend various combinations of foods. Great one-dish such as this one are family favorites and are served at potluck suppers, social and family gatherings where friends can catch up on local gossip. | Every Christmas party that we invited Stella to she made this dish; but she also made it just to share. If you knew Stella you knew her signature dish. Stella was French Canadian...I told her she could always be a transplanted Cajun. |
| It takes a magnificent tree to produce a great-tasting nut. Pecan trees usually range in height from 70 to 100 feet, but some trees grow as tall as 150 feet or higher. Native pecan trees – those over 150 years old – have trunks more than three feet in diameter. There are over 1,000 varieties of pecans. Many are named for Native American Indian tribes, including Cheyenne, Mohawk, Sioux, Choctaw and Shawnee. Before a shelled pecan is ready to be sold, it must first be cleaned, sized, sterilized, cracked and finally, shelled; Can you imagine a pecan skyscraper? | Eat at you own risk...Some peppers are hotter then others but I fine the hotter, the better. These are absolutely delicious. Once you start eating them, you can't get enough. For holiday's I use about 40 peppers and they are gone in minutes. |
