Aunt Ruby's Blue Cheese DressingMawMawRuby
Aunt Ruby was ALWAYS having to search for this recipe cuz she forgets where she puts it; she decided to ask our site to put it on this website so her searches would be ended! Not like American Idol - that search is forever ongoing. You know that show American Idol - the hit FOX musical reality series following three judges, Simon Cowell, Randy Jackson (II), and Paula Abdul, along with host Ryan Seacrest around the United States in search of the next American Idol. I think they need to stop and look at all our Cajun Idols for their next winner.

Tartar SauceSharlotta Endom
From Wikepedia - Tartar sauce or tartare sauce is a thick white sauce made from mayonnaise and finely chopped pickled cucumber, capers, onions (or chives), and fresh parsley. Chopped hard-boiled eggs, olives, and horseradish are sometimes added, and dijon mustard is often used as an emulsifier if the mayonnaise is made from scratch. It is frequently used to season fried seafood dishes. It can also be made by mixing commercially produced relish and mayonnaise. Vinegar can be added for a sharper flavor. The sauce is typically of a rough consistency. Tartar sauce is not to be confused with Cream of tartar, which is the potassium salt of tartaric acid. This recipe screams bring on the fish!
Happy Day Mimosa Maw Maw's Recipe Box
Maw Maw loves to go to brunch and enjoy Mimosa's. It seems her niece has developed her taste as she loves to prepare and share this drink for weddings, bridal showers or Sunday brunch. After all, people who drink in moderation tend to be healthier and live longer than those who either abstain or abuse alcohol. Moderate consumption of alcohol does not appear to contribute to weight gain. And distilled spirits (whiskey, brandy, rum, tequila, gin, etc.) contain no carbohydrates, no fats of any kind, and no cholesterol however they do contain calories! Surprisely over half of the hospitals in the largest 65 Metropolitan areas in the U. S. have reported that they offer alcohol beverage service to their patients. Contrary to a common misperception, alcohol does not destroy brain cells. In fact, the moderate consumption of alcohol is often associated with improved cognitive functioning. Remember to always drink responsibly and Never Drink and Drive. Sparkling wine maybe substituted.

Fresh Tomato Chili SauceMawMaw Ruby's Recipe Box
Your garden has split it seams with too many tomatoes. Not enough friends to share them with? Try this - Great for cocktail dipping sauce or served with fried foods or grilled steaks. Fun facts from the USDA - Tomatoes are very high in the carotenoid Lycopene; eating foods with carotenoids can lower your risk of cancer. Other vegetables high in carotenoids are carrots, spinach, sweet potatoes, and collard greens. In the United States, more tomatoes are consumed than any other single fruit or vegetable! A horn worm can eat an entire tomato plant by itself in one day - that is one mighty hundry critter!

Bob's Crawfish/Shrimp DipMaw Maw's Crawfish Eating Friends
A wonderful tasting crawfish dippping sauce. Fun fact from www.pclink.com on another creature that eats crawfish - the racoon. A common observation is that of raccoons taking morsels of food and washing it in water before they eat it. Cleanliness? Not really. What is mistaken for washing its food is in reality just another way of seeing for the raccoon. A raccoons sensitive hands and finger act as a second pair of eyes. When raccoons are at the edge of a pond or stream searching for crayfish, frogs, minnows and other aquatic treats they use their hands and fingers to probe under rocks and in the mud. When they do this they are feeling their way around more than they are looking for things. So what's going on here? It seems that water actually increases the sensitivity in the fingers. By taking whatever they find and holding it under water and then turning it all around and feeling it they appear to get a better idea of what it is they are going to eat. Rather than washing their food, they are seeing the food through their fingers!

Basic Duck MarinadeMaw-Maw for the Duck Hunters
Marinate is defined by cookeryonline.com as - "To let meat or vegetables stand in a flavored liquid, usually acidic, for several hours and in some case days - to add flavor or to tenderize". Marinades are used to neutralize the game flavor in ducks and wild game. I have used several marinades including the basic Italian Dressing but I find this one to be exceptional - from fooddownunder, Common Misspellings: maranade, mariande

Brown Sugar Vanilla Sauce for Bread Puddings and DessertsMawMaw
Adapted from southerfood.com, this brown sugar sauce is great on bread pudding, fruit, pound cake, coffee cakes and ice cream. We eat at a Cajun restaurant that serves the most delicious sauce over it's bread pudding. The cook gave me all the ingredients. Absolutley the best! For a taste treat add 1/4 cup rum, whiskey or brandy to the sauce.
Brown Sugar Sauce for Bread Pudding and CakesMawmaw
I treid this recipe from www.allrecipes.com by Gail Law for my bread pudding and it was so good. The recipe calls for milk but cream may be substituted. Pour over coffee cake. Refrigerate for a week or more and reheat just before serving.

Refrigerator Bread and Butter PicklesJane Hebert's Recipe Box
From http://www.foodtimeline.org/foodfaq2.html Who first made the pickle and when? This simple question does not have a simple answer. It all depends upon how you define the word "pickle." Food historians trace the process of pickling (preserving foods in salt/brine or vinegar) back to Ancient Egypt. These peoples were known to have pickled fish and melons. If you mean the pickling of cucumbers (what we usually call pickles today) that practice perhaps dates back to India, about 3,000 years ago. Some food historians say William Beukelz, a Dutch fisherman invented pickled foods in the 15th century.
